The Farr Rising Saignée Rosé returns in 2025 with its signature salmon hue and that unmistakable Farr touch. Made using the saignée method — where juice is “bled off” from red wine ferments to concentrate flavour — this style always carries more depth, perfume and texture than your typical pale pink rosé.

The 2025 release is playful yet refined: ripe tropical fruit, wild strawberry, citrus blossom and a gentle nuttiness from time in oak. The palate is soft, refreshing and beautifully balanced — a rosé you can enjoy on its own or pair with everything from seafood to summer salads.

What the experts say about this wine

Saignee, technically meaning “to bleed game meat or poultry”, refers to the way we ‘bleed’ juice for this wine. We allow the Farr Rising pinot noir fruit to sit in tank for two to three hours before bleeding free-run juice at a suitable colour for rosé production. This process concentrates the pinot ferment, but we also produce a barrel-fermented rosé. Natural barrel fermentation at cool temperatures is followed by full malolacitc fermentation. The wine is then placed in four- and five-year-old barrels for 10 months before being filtered and bottled.
