Like Champagne, this CrĂ©mant undergoes secondary fermentation in the bottle using the mĂ©thode traditionnelle (the same method used in Champagne). The only difference is geography: sparkling from Burgundy can’t be called Champagne, but the technique - and the quality - can be remarkably close.
