Yarra Yering Sparkling Blanc de Blanc 2017

The sparkling you didn’t know you needed 🍾✨

A Blanc de Blancs from Yarra Yering? Yes, and it’s every bit as good as it sounds. 100% Chardonnay, aged on lees for complexity, and made in the traditional method—just like Champagne.

Pale yellow, the nose creamy, toasty brioche and with a lemon balm freshness. Creamy and a chalky texture with a bright, citrusy refreshing finish. Generosity from 7 years resting on its yeast lees.

This 2017 vintage brings a citrusy lemon balm freshness, with a creamy, chalky texture and a touch of brioche from extended aging. The result? Elegance, depth, and fine bubbles that make this one seriously impressive Aussie sparkling.

If you love Champagne but want something different, this is a must-try. And with Yarra Yering behind it, you know it’s got serious pedigree.

From the winemaker

What the maker says about this wine 👇

Hand harvested and whole bunch pressed to minimise colour and phenolic extraction. The lightly clarified juice transferred to old oak barrels for fermentation. The base wine maturation in barrel lasted for 8 months before sending to tirage. Tirage is the second fermentation; a liquid solution of yeast, wine and sugar is added to the base wine to create the secondary fermentation, this time in bottle. We call this technique the traditional method or bottle fermented method, it is here that the bubbles or bead is formed and trapped inside the bottle. We then left the bottles to rest for 7 years or 80 months, the wine sitting with its secondary yeast lees to impart texture, creaminess and a bread-like complexity. Disgorgement is the final step of the process; it is the removal of this yeast lees deposit. The wine is finally ready to be enjoyed!
